  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, whisk together cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until smooth.
  4. Gradually combine the dry mixture with the wet ingredients until just mixed; do not overmix.
  5. Spray an 8" x 4" loaf pan with oil spray and pour in the batter. Sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
