  • 2 tablespoons unsalted butter, melted

  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium-sized)
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup whole milk
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallows, divided

Instructions

  1. Preheat your oven to 400°F and prepare a muffin pan with liners or nonstick spray.
  2. In a large bowl, mix melted butter with brown sugar until smooth. Add egg, vanilla extract, mashed banana, and sour cream; combine well.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually add the dry ingredients to the wet mixture alternately with whole milk until just combined.
  5. Gently fold in three-fourths of the chocolate chips and vegan marshmallows.
  6. Fill muffin liners with batter and top with remaining chocolate chips and marshmallows.
  7. Bake for about 16 minutes or until golden brown and a toothpick comes out clean.
