  • 4 slices sourdough or artisan bread
  • 4 oz brie cheese, thinly sliced
  • 2 tablespoons butter, softened
  • 1 cup fresh blackberries
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Pinch of salt

Instructions

  1. In a small saucepan over medium heat, combine blackberries, balsamic vinegar, honey, and salt. Stir occasionally for about 5 minutes until thickened. Remove from heat and let cool.
  2. Heat a non-stick skillet over medium-low heat.
  3. Butter one side of each slice of bread generously.
  4. Place two slices of bread in the skillet, buttered side down. Layer with brie and spoonfuls of the blackberry mixture. Top with another layer of brie and remaining slices of bread (buttered side up).
  5. Cook for 2–3 minutes per side until golden brown and cheese has melted. Press gently with a spatula while cooking.
  6. Let rest for one minute before slicing diagonally and serve warm.
