  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Vegetable oil (for frying)

Instructions

  1. In a bowl, blend cream cheese, cheddar cheese, jalapeños, green onion, garlic powder, salt, and pepper until smooth.
  2. Lay an eggroll wrapper flat; add about 2 tablespoons of filling diagonally in the center. Fold the bottom corner over the filling, tuck in sides, and roll tightly. Seal edges with water.
  3. Heat vegetable oil in a skillet to 350°F (175°C). Fry eggrolls seam side down for 3-4 minutes until golden brown.
  4. Remove from oil and drain on paper towels. Serve warm with your favorite dipping sauce.
