  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (adjust as needed)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the filling by simmering chopped dried apricots with water and sugar until tender. Stir in lemon juice and cool.
  2. Preheat the oven to 375°F (190°C). Mix flour, sugar, baking powder, and salt in a bowl. Cut in cold butter until crumbly. Add egg and vanilla.
  3. Reserve some dough for topping. Press remaining dough into a greased pan. Pour cooled apricot filling over crust.
