  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled, cored, and sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 75 g granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 180°C (350°F). Crush the biscoff cookies and mix them with melted butter. Press into the bottom of a springform pan.
  2. In another bowl, prepare the crumble topping by combining melted butter, flour, brown sugar, and oats.
  3. Cook sliced apples in a skillet with brown sugar and cinnamon until slightly softened.
  4. Beat cream cheese with granulated sugar until smooth; add Greek yogurt, vanilla extract, spices, and eggs one at a time.
  5. Layer half the cheesecake filling over the crust, followed by cooked apples and remaining filling. Top with crumble mixture.
  6. Bake for about 85 minutes or until set but slightly jiggly in the center. Cool gradually in the oven before chilling.
