  • ½ cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • For the caramel filling: ½ cup unsalted butter, 1 cup brown sugar, ¼ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the butter and brown sugar until fluffy.
  4. Beat in eggs, apple cider, and vanilla extract until combined.
  5. Gradually add dry ingredients into the wet mixture until just combined.
  6. Scoop rounded dough onto a lined baking sheet with space in between each scoop.
  7. Bake for 12-15 minutes until golden around the edges.
  8. For the caramel filling, melt butter in a saucepan over medium heat; stir in brown sugar and heavy cream. Bring to a boil for about 3-5 minutes before removing from heat and adding vanilla.
  9. Once cookies cool completely, spread caramel filling on one cookie and sandwich with another.
